Vas' Sweet Kale Salad
Ingredients
For Salad:
4 cups shredded and chopped curly kale
2 cups thinly sliced Brussels sprouts
1 cup broccoli matchsticks (cut up the stem into thin matchsticks)
1/2 cup dried cranberries (I didn’t put these in last night)
1/4 cup roasted pumpkin seeds (I add a bit of soy sauce and maple syrup when roasting)
I added some baby kale leaves too
For Dressing:
1/4 cup mayonnaise
1 1/2 tablespoons milk
1 1/2 tablespoons white balsamic, champagne, or white wine vinegar
1 tablespoon sugar or honey
2 teaspoons poppy seeds
pinch of salt
Directions
Combine all the salad ingredients in a large bowl. Whisk together the dressing ingredients. Pour the dressing over the salad and toss well to throughly coat.
Let the salad rest for at least 5-10 minutes before serving.
