Liz' Lemon Cheesecake
Ingredients
Crust
200g ground almonds
4tbsp melted butter
4tbsp sugar
Filling
1kg cream cheese
350g castor sugar
5 tsp lime or lemon juice
4 eggs
I add some finely grated rind
For the topping
300g sour cream
60g sugar
4 tbsp lime or lemon juice
Directions
Heat oven 180c
Line a 24cm cake tin.
Mix almonds sugar and butter, press evenly into bottom of cake tin and chill for 30 mins
Then wizz up the filling, add to tin.
Wizz up sour cream topping, keep to one side
Put in oven for 40-45 minutes, it should be fairly wobbly still. Take out and evenly spread topping..... On top!
Return cheesecake to oven for 10 minutes
Remove and Completely cool before covering an putting in the fridge for minimum 6 hours.
